Mama Leeber’s Family Recipes – Part III

Not only does the Cornerstone family know their way around building a kitchen, they also know how to whip up some delicious meals in them as well! Our very own “Mama Leeber” is bringing her crowd favorites to the dinner table this Thanksgiving, including her famous sweet potatoes! Try your hand at this simple dish for your next holiday gathering:

 

Candied Sweet Potatoes

Ingredients:

  • 4 – 6 sweet potatoes
  • 1 cup pancake syrup
  • 1/2 stick of butter
  • 2/3 cup of brown sugar
  • Mini marshmallows (to preference)

Instructions:

Preheat the oven to 350° F.

Boil the sweet potatoes just long enough to where a knife can go through them. Then, let the potatoes cool long enough to where you can hold them without burning your hands. Peel the potatoes and slice them into pieces about a ¼ inch wide. Lay them flat in a baking dish.

Mix syrup, butter, and brown sugar together, then bring to a boil. Stir the mixture until all clumps are removed. Allow the mixture to thicken and coat the potatoes with the mixture. Then, toss mini marshmallows on top to your personal preference. In Mama Leeber’s words, “you can’t put too much on, you can’t put too little.”

Pop the baking dish in the oven. Bake at 350° F for 20 minutes or until the marshmallows are melted.
